Quesadillas (Truly Mexican)
12 corn tortillas or 8 flour tortillas
2 cups grated monteray jack, mozzarella or manchego
pickled jalepenos or Fast mashed black beans
Directions
Heat a skillet over medium high heat, put tortilla on skillet, topping each one with 3 TB cheese, some beans or pickeled jalepenos.
Fold over and press down slightly. Cook for an additional 45 seconds on each side.
