140g (1 1/4 cups) old fashioned rolled oats
50g (1/2 cup) ribbon or shredded unsweetened coconut
85g (3/4 cup) almonds, sliced or chopped
80g (3/4 cup) almond flour
125g (2/3 cup) dried currents, raisins, dried apricots, roughly chopped
60g (1/2 cup) walnuts or pecans, roughly chopped
75g (1/2 cup) pumpkin seeds
35g (1/4 cup) sunflower seeds
1/2 tsp cinnamon
pinch of salt
3 Tbsp maple syrup or honey
3 Tbsp vegetable oil or melted coconut oil
1/2 tsp vanilla extract
1. Preheat oven to 275 degrees
2. In a bowl, mix together the dry ingredients.
3. In a small bowl, combine the maple syrup with the oil and vanilla. Drizzle three quarters over the dry mixture. Stir to coat evenly.
4. Spread the mixture evenly on a baking sheet and bake for 20 minutes. Stir and drizzle with the remaining maple syrup mixture.
Bake for an additional 20 minutes or until lightly browned and toasted. Set aside to cool.
