Family Sized Omelette
1 tablespoon olive oil
1 small onion
1/8 teaspoon red pepper flakes
5 ounces arugula
6 eggs
1/4 cup sun-dried tomatoes
2 tablespoons butter
3/4 cup cheese
pepper
Heat oil over medium high. Add onion and red pepper flakes, cook for 5 minutes.
Stir in arugula and sun-dried tomatoes for about a minute. Transfer to plate.
Whisk eggs and pepper. Add butter to skillet. Return eggs + arugula mix to skillet over medium heat.
Stir gently in a circle for 1 minute.
Pull cooked edges toward centre and tilt (1 minute)
Cover skillet, turn heat to low, for 5 minutes.
Sprinkle cheese on top, cover and let sit for 1 minute.
